Turmeric Pulled Pork

Ingredients

4 Servings
1 tbsp olive oil
1 onion, chopped
1 garlic clove, chopped
1tsp ginger, chopped
3tsp turmeric powder
1tsp curry powder
1tsp chili flakes
1tbsp tomato paste
3dl vegetable stock
3dl soy cream
500g planted.pulled
250g cashew yogurt from New Roots (vegan)

Preparation

Heat oil in a large skillet over medium heat. Stir in onion, garlic and ginger and cook for 5 minutes, then stir in turmeric, curry and chili flakes and cook for another 2-3 minutes.

Mix in the tomato purée, stock and soy cream and stir well. Add the planted.pulled and cook, covered, over a low heat for 30 mins (stirring occasionally).

Add yogurt, stir to serve.

Tip: Serve rice as a side dish.
