Preparation

  1. For the dough, combine the flour, sugar, yeast, and salt in a bowl; gently warm the soy milk, add the oil, and mix everything into a dough; knead for 8–10 minutes; let it rise, covered, for 1–1.5 hours; divide it into 8 pieces; shape them into ovals; brush them with oil; and fold them in half.
  2. Slice the cucumbers into thin slices, mix together the vinegar, sugar, black sesame seeds, and salt, add the cucumbers, and let them marinate.
  3. Heat oil in a small saucepan, briefly toast the sesame seeds, then add the ginger-garlic paste, gochujang, sweet soy sauce, brown sugar, rice vinegar, and water. Let everything simmer briefly, then stir in the sesame oil at the end.
  4. Heat some oil in a pan, sear the planted.pulled until it’s browned and slightly crispy, add the sauce, and toss everything together until it’s glossy and caramelized.
  5. Steam the bao buns for 10–12 minutes, until they are soft and fluffy.
  6. Carefully open the bao buns, fill them with planted.pulled, top with pickled cucumbers, and garnish with cilantro, lime, or chili flakes to taste.
