Steak bites stir-fry with noodles

Preparation

  1. Cook the pasta according to the instructions on the packet, drain and rinse under cold water.
  2. Chop the spring onions, separating the white part from the green part.
  3. Cut the peppers and carrots into thin strips.
  4. Cut the green beans into 4-5 cm long pieces.
  5. Cut the shiitake mushrooms into slices.
  6. Chop the garlic and ginger.
  7. Heat the oil in a wok over a medium-high heat. Add the white part of the spring onions, garlic and ginger. Fry for 1 minute.
  8. Add the shiitake mushrooms and fry for 2-3 minutes.
  9. Add the peppers, green beans and carrots and fry everything for a further 5-7 minutes.
  10. Heat some vegetable oil in a separate pan over a high heat. Add the planted.steak bites and fry them for 3-4 minutes until they are nicely caramelized and slightly crispy. Then add them to the vegetables in the wok.
  11. In a small bowl, mix the soy sauce, white miso paste, mirin and rice vinegar.
  12. Put the noodles in the wok, pour the sauce over them and mix everything well. Add chili flakes if desired. Fry everything for a further 2-3 minutes until the sauce thickens slightly.
  13. Serve the dish with the green part of the spring onions and garnish with fried garlic and roasted nuts. Season the dish with salt and pepper to taste.
