Classic

Preparation

onion stock
  1. Caramelize the onions in a little oil until dark brown.
  2. Add the mushrooms.
  3. Fill with cold water.
  4. Bring to a boil.
  5. Simmer for about 1 hour.
  6. Reduce the stock by half or until the desired flavor is achieved.
Goulash sauce
  1. Heat the oil.
  2. Add the finely diced onion and fry until golden brown.
  3. When the onions are golden brown, add the garlic and roast for 1 minute.
  4. Add the tomato paste and roast it for 1 minute.
  5. Add the harissa paste.
  6. Deglaze with the red wine and reduce the wine by half.
  7. Add the spices.
  8. Fill up with the onion stock.
  9. Add soy sauce.
  10. Bind with starch.
  11. Briefly sauté the diced peppers in a separate pan over high heat and add to the sauce.
  12. Finally, add the marjoram.
Final preparation of goulash
  1. Heat the oil in a pan over medium heat.
