Preparation

Spicy Veganaise
  1. Mix all the spices and the lemon juice with the veganaise until you have a smooth cream.
Aioli
  1. Blend the base: Place the soy milk, lemon juice, Dijon mustard, garlic and salt in a blender or tall container (if using a hand blender) and blend until smooth.
  2. Emulsify: Mix at low speed and slowly pour in the oil until the mixture becomes thick and creamy.
  3. Season to taste: Refine with more lemon juice or salt to taste. If the consistency is too "grainy", pass the aioli through a fine sieve.
McDonald's style curry dip
  1. Prepare the apples: If you are using apple sauce or cooked apples, skip this step. Peel and chop the fresh apples, then place in a small saucepan with a dash of water. Cook over a low heat until soft.
  2. Blend the sauce: Place all ingredients in a blender and blend for about 1 minute until completely smooth.
  3. Thicken: Pour the sauce into a small saucepan and simmer over a low heat for 4-5 minutes, stirring occasionally, until slightly thickened and aromatic.
