Grilled peach & planted.steak salad

Preparation

  1. Brush the peach slices lightly with olive oil and grill them in a grill pan until they have grill marks and are slightly soft.
  2. Place the chopped spring onion in a small bowl. Heat the olive oil until it is hot and then pour it over the spring onion to cook it lightly and flavor the oil.
  3. Puree the red onion, garlic, parsley and oregano in a blender until everything is finely chopped. Add the mixture to the spring onion and oil and stir in the red wine vinegar. Season to taste with salt and pepper.
  4. Prepare the planted.steaks according to the pack instructions and then cut them into slices.
  5. Spread the rocket in a large bowl as a base. Top with cucumber, cherry tomatoes, grilled peaches, sliced planted.steak and pickled red onions.
  6. Drizzle the salad with the chimichurri just before serving.
