Preparation

Jus

For the sauce, finely dice the onions, garlic and vegetables and sauté in a little oil until everything has taken on a good color. Fry the tomato purée briefly, then deglaze with red wine and reduce. Add the stock and fresh herbs and simmer the sauce for a further 10 minutes. Finally, mix a little flour with water and bring to the boil. Season to taste with salt, pepper, soy sauce and a touch of maple syrup.

Polenta

Bring the vegetable stock to the boil, slowly stir in the polenta and simmer over a low heat for about 15 minutes, stirring constantly. Season to taste with vegetable butter, salt, pepper and a little freshly grated nutmeg.

Beans & mushrooms

Place the fresh beans in boiling salted water for approx. 5 minutes, then drain. Finely chop the mushrooms and fry in a little oil until golden brown. Fry the beans briefly, season everything with a squeeze of lemon juice and add salt, pepper, nutmeg and a pinch of chilli to taste.

Steak

Marinate the steak with a little oil, salt and pepper and sear in a hot pan or on the grill over a medium-high to high heat for approx. 3-4 minutes on each side. 

Oscillating sawdust

Lightly toast the panko in a pan, then add a knob of vegetable butter and fry until golden brown. Season with a pinch of salt and some paprika powder - for a crispy topping with that certain something.
