Spring salad with planted.steak

Preparation

  1. Heat 1 tbsp olive oil in a pan over a medium heat. Add the asparagus, green peas and green beans. Season with salt and pepper and sauté until the peas and beans are defrosted but still firm to the bite
  2. Cut the bread into bite-sized pieces. Mix with 2 tbsp olive oil, salt and pepper and bake in the oven until crispy to make croutons.
  3. Fry the planted.steaks in a pan with a little olive oil according to the pack instructions.
  4. In the meantime, prepare the dressing by mixing the lemon juice, 2 tablespoons of olive oil, salt, pepper and dried oregano well.
  5. In a separate pan, fry the chopped red onion until golden brown.
  6. Assemble the salad by combining the sautéed vegetables, croutons, cucumber, dill and chives in a large bowl. Drizzle with the dressing and mix carefully.
  7. Serve the salad on plates, topping each portion with sliced planted.steak, crumbled vegan feta and the fried onions.
