Preparation

  1. Boil the potatoes whole until tender, let them cool, gently flatten them, brush them with oil, and grill them until crispy and golden brown.
  2. Finely chop the white cabbage, red cabbage, and carrots, chop the parsley, and mix everything together in a bowl.
  3. Mix the yogurt, mayonnaise, vinegar, mustard, oil, and maple syrup to make a dressing, add it to the vegetables, season everything, and stir in the lemon zest just before serving.
