Preparation

  1. Preheat the oven to 200°C and toss the bell peppers, zucchini, and red onion with olive oil, salt, and pepper; roast the vegetables for 15–20 minutes, until they are tender and lightly caramelized.
  2. Prepare the planted.steak Herbs by grilling them, searing them in a pan, or heating them in the oven, then cut them into pieces.
  3. Cook the quinoa according to the package directions, fluff it with a fork, and season it lightly with salt and a little olive oil.
  4. Mix vegan yogurt, garlic, lemon juice, oregano, and salt to make a creamy dressing.
  5. Assemble the bowl by using quinoa as a base, then layer the roasted vegetables, cherry tomatoes, olives, and (optional) pickled onions on top. Add the planted.steak Herbs and drizzle the dressing over everything.
  6. Garnish the bowl with parsley, mint, and toasted almonds.
