Some fresh ginger

Coconut milk
200 ml
Vegetable broth
2 TL
Tomato paste
A handful of cherry tomatoes

Paprika
1 TBSP.
Curry powder
1 TSP
Cumin
Salt/pepper

Preparation

  1. Chop all the vegetable ingredients.
  2. Fry the onion, garlic and ginger until translucent.
  3. Add the pumpkin and tomato purée and fry for a few more minutes.
  4. Add the coconut milk, vegetable stock and spices. Cook until the pumpkin is soft.
  5. In the meantime, fry the planted.chicken . As soon as the pumpkin is soft, add the tomatoes and the fried planted.chicken to the curry.
  6. Garnish with coriander, lime juice and soy yogurt. Serve with naan or rice.
