Currywurst macaroni

Macaroni or pasta of your choice

Diced onion

Diced pointed peppers (or normal peppers)

strained tomatoes

Tomato paste
2 tbsp
Curry powder
1 tbsp
Paprika powder

grated vegan cheese
Oil; salt and pepper to taste
A handful of chopped fresh parsley

Preparation

  1. Heat a little oil in a large frying pan over a medium heat. Fry the sausage pieces in it until golden brown. Remove from the pan and set aside.
  2. In the same pan, add the diced onion and peppers and fry for about 3 minutes until softened.
  3. Stir in the chopped garlic and tomato purée. Fry for a further 1-2 minutes.
  4. Deglaze the pan with the strained tomatoes and add the water. Stir in the curry powder, paprika powder, salt and pepper. Mix well and bring to the boil.
  5. Add the macaroni directly to the sauce. Simmer, stirring occasionally, until the pasta is cooked. If the sauce thickens too much, add a little water.
  6. As soon as the pasta is ready, return the sausage pieces to the pan. Stir in the vegan cheese until it has melted and is well distributed.
  7. Serve the currywurst macaroni on plates and garnish with freshly chopped parsley. Enjoy your meal!
