Preparation

Bad Bunny Rice
  1. Prepare the sofrito by finely pureeing the onion, green bell peppers, red bell peppers, garlic, cilantro, and, if desired, culantro.
  2. Heat the oil in a large pot and sauté the sliced plant-based sausages for 2–3 minutes, until they are lightly browned, then remove them from the pan.
  3. Add the sofrito to the same pot and sauté it for 2–3 minutes, until it becomes fragrant.
  4. Add the rice and stir it in so that the grains are well coated with the sofrito and oil.
  5. Pour in the vegetable broth and add the olives, capers, bay leaf, salt, and pepper; stir everything gently.
  6. Bring everything to a boil, then reduce the heat, cover the pot, and let the rice simmer for 15–18 minutes, until it is tender and has absorbed the liquid.
  7. Add the planted.sausages and the peas, and let everything simmer for another 2–3 minutes until everything is hot.
  8. Remove the bay leaf, fluff the rice with a fork, and serve it hot, optionally garnished with fresh cilantro or extra olives.
