Preparation

  1. Mix the cucumber and radishes with the salt and let them sit for 10 minutes. Then pat off the excess water.
  2. Mix gochujang, rice vinegar, soy sauce, garlic, sesame oil, and sugar or agave syrup to make a marinade. Add the cucumber, radishes, and half of the scallions, and let everything marinate for 20–25 minutes.
  3. Mix mayonnaise, kimchi, Sriracha, and lime juice to make a creamy kimchi mayo.
  4. Heat some oil in a pan and sauté the planted.steak bites according to the package instructions. Add a splash of soy sauce and a little sesame oil, then toss everything together briefly.
  5. Divide the cooked rice between two bowls, top with the pickled vegetables and the planted.steak bites, and drizzle everything with the kimchi mayo.
  6. Garnish the bowl with the remaining scallions and sesame seeds.
