Balsamic vinegar

Preparation

Preheat the oven to 220°C convection. Line a baking sheet with a piece of baking paper.

Put the oil in a bowl and add the lemon zest from one lemon. Halve the lemon and squeeze the juice into the bowl. Add the garlic, salt, and pepper and mix.

Remove the stalk from the bottom of the pointed cabbage. Now quarter the cabbage lengthwise. Place the quarters on the baking sheet. Brush the pointed cabbage with the lemon-garlic oil and place in the oven. Bake in the oven for 20 to 25 minutes. Turn the baking sheet halfway through. When the pointed cabbage is golden brown, remove from the oven and let it cool.

In a small saucepan, dissolve the sugar with a little sugar over a medium heat and boil down to a caramel. Deglaze with the balsamic vinegar and reduce until the vinegar is almost reduced. Pour in the planted.roast sauce and season with salt and pepper to taste.

Preheat the oven to 160°C fan. Put some rapeseed oil in a non-stick frying pan and carefully fry the planted.roast cubes over a medium heat until golden brown on all sides. Now place on an ovenproof dish and place in the oven for 10-15 minutes.

Also heat the pointed cabbage in an ovenproof dish in the oven for 10 minutes.

Remove the pointed cabbage and the planted.roast cubes from the oven and arrange on the plate. Arrange the raisins on the cabbage wedges. Arrange the cranberry jelly on the plate and spread the hot planted.roast sauce on top. Done.
