Continuation of the Signature Editions with an Asian twist 

 

Amateur chefs were thrilled when Tim Raue and Planted announced their first joint Asian signature creation last year. The vegan Peking duck, marinated in a specially created five-spice marinade and featuring a simple recipe, allowed even novice cooks to immerse themselves in the world of flavors created by the top Berlin chef. To build on the enormous success of the first signature dish, the partners have now developed a new creation: The signature dish featuringplanted.chicken Paprika & Lime” captivates with the fresh citrus notes of lime and a light, fruity spiciness. The special sauce created by Tim Raue—which is alsoplanted.chicken as a marinade forplanted.chicken —has a light spicy-sweet-and-sour flavor and is incredibly versatile. The base flavor of green bell pepper comes through exceptionally well in combination with the Signature Dish developed by Tim Raue. Jerusalem artichoke purée paired with braised cucumber gives the recipe a special zest and an Asian touch, which is typical of Tim Raue’s cuisine. 

 

The Swiss food start-up Planted, which has made it its mission to offer plant-based meat that does not compromise on taste, versatility or consistency, is responsible for the production. The goal is to be better than animal meat. To achieve this, Planted not only works with natural ingredients such as yellow peas, but also with the people who know all about flavor diversity - and are open to new ideas and approaches. "My cuisine thrives on aromatics, on sweetness, acidity and spiciness. And in the last 13 years it has constantly evolved, becoming more complex and multi-layered. We always try to keep our finger on the pulse and constantly reassess what adjustments we want to make," says Tim Raue about the new creation in collaboration with Planted. He was thrilled with the consistency of the Planted products from the very first bite. 

 

Together for more sustainable flavor 

 

The native Berliner with two Michelin stars and five Gault&Millau toques is one of the most successful top chefs in Germany. The TIM RAUE restaurant in Berlin was voted 26th in the „The World’s Best Restaurants“ in 2022, and Planted products are an integral part of the vegan menu there. 

 

“What I appreciate most about the Planted products is their texture—the fibrousness is extremely close to that of animal meat. Plus, they contain no additives, and the flavor is very subtle. That makesplanted.chicken for this signature Asian dish. My restaurant has offered a vegan menu for three years now and a vegetarian menu for 26 years. But especially in recent years, the demand for vegan and vegetarian menus has skyrocketed,” says Tim Raue. 

 

Planted products use significantly less water in their production and have been shown to produce less CO2 than their animal-based equivalents. Withplanted.chicken , CO2 emissions are reduced by up to 85 percent and water usage is cut by up to 63 percent. Furthermore, the principle of a sustainable circular economy is integrated throughout all areas of the company. An innovative production process helps to conserve the planet’s finite resources. Furthermore, all Planted meat products consist solely of natural ingredients (peas, sunflower seeds, oats, rapeseed oil water).
